Video poker
I know, I'm already playing "video poker" :^)
But the mechanics of "real-person poker" as opposed to video poker are very different. They're almost not even the same game.
For starters, video poker is almost always a derivative of draw poker, whereas the real-person poker is a form of Hold'em.
Video poker is very easy to implement in code, and very easy to tune the stakes. This could even be a way for casinos on the edge of town to draw in more players--
When a casino wants to control video poker payouts, it doesn't screw with the cards that are dealt, it alters the payout scale. A casino owner could set his or her own payout scales (subject to limits) in order to get more butts in the seats. They could then advertise this through the chat system, or through NPCs that make such information known (this would likely have to be a feature added later--I haven't seen ads for players' casinos.)
